Ingredients

  • 500g Lamb riblets
  • Chopped tomatoes
  • 1 tsp Cajun spice
  • 1 tsp Garam Masala
  • 200ml Olive oil
  • Salt & Pepper to taste
  • ½ chopped Onion
  • Grapefruit marmalade / Orange marmalade
  • 1 clove Garlic
  • 100ml Danone NutriDay Plain Yoghurt
  • ½ tsp ground Ginger
  • 400g Baby potatoes
  • 40g Coriander leaves
  • 40g Parsley
  • 100g Butter

Method

Baby potatoes

  1. Boil potatoes for 20 min or until soft
  2. Chop parsley
  3. Cut potatoes in half & fry in a pan with parsley & butter till golden brown
Riblets
  1. Coat ribs in 100ml olive oil
  2. Season to taste & grill till brown & crispy
Sauce
  1. Fry onions in left over olive oil
  2. Chop parsley & coriander together
  3. Add tomatoes into onion mix. Cook for 10 min on a low heat
  4. Add all dry spices & cook for another 10 min
  5. Add yoghurt & cook for 5 min
  6. Just before serving, add parsley & coriander
For serving, place potatoes on plate, top with ribs, drizzle sauce & marmalade.
